Si nous vous dirigeons vers la Maison du Colombier à Beaune c’est que le tenancier Roland Chanliaud aurait probablement répondu comme vous à ce questionnaire. Son nouveau gastro-bar, qu’il a complètement réaménagé, représente d’ailleurs bien sa vision de l’épicurisme. Murs en pierre, peinture noire, lustres a pampilles et acier, on hésite entre s’affaler dans un fauteuil d’époque ou s’accouder au bar pour tenir le crachoir au cuistot. Si Le lieu est élégant, la table vaut aussi son pesant de cacahouètes. Car même s’il ne vous le dira pas, Roland est une figure locale de la gastronomie. 22 ans d’expériences sur des tables doublement et triplement étoilées, il touche lui même le graal en 1996 pour son ancien restaurant. A la maison du Colombier, il est plus libre de travailler les produits qui lui chantent. Donc pas de carte mais des inspirations du jour. On a ouïe dire d’exceptionnels œufs cocotte bio aux lamelles de truffe de Bourgogne. Incontournable à Beaune.
